
I suspect a few of you are like me in that you are frequently volunteering to help with food for various church events. My obligations usually consist of breakfast items for our Tuesday morning MOPS (Mother of Preschoolers) group and Thursday morning women’s Bible study. On occasion I have remembered my obligation at the last minute. Oops!
This recipe is perfect for such a moment, unless you are going to give in and run to the local bakery for donuts. I admit I have done that! I hope you enjoy these tasty and easy muffins.
- 1 cup quick-cooking oats
- 1/2 cup milk
- 3/4 cup packed brown sugar
- 1/4 cup margarine or butter, melted
- 1 egg
- 1 cup all – purpose flour
- 1/2 cup chopped walnuts (optional)
- 2 tsp baking powder
Heat oven at 400. Grease 12 medium muffin cups. Mix oats, milk and brown sugar in large bowl; let stand 5 minutes. Add margarine and egg, blend well. Stir in remaining ingredients just until moistened. Fill muffin cups two-thirds full. Bake 15-20 minutes, or until wooden pick inserted in center comes out clean. Makes 12 muffins. (Per serving: 195 calories.)
